These chocolate chip banana muffins are so easy to make, are egg-free and can easily be made vegan if you opt for vegan butter and vegan-friendly chocolate chips.

My favourite egg replacer for sweet baked goods is applesauce, which is what I use in this recipe. I use store-bought, because I can't be bothered making my own (busy mum mantra - work smarter not harder), but if you have leftover apple puree frozen from your bubs' meals, I'm sure you could try defrosting it and seeing if that would work!

Servings 12 muffins

  • 3 medium-sized, very ripe bananas
  • 1/3 cup melted butter I like to use the 'Buttery' Nuttelex spread, which is vegan
  • small pinch salt
  • 3/4 tsp baking soda
  • 3/4 cup caster sugar plus extra for topping (optional)
  • 1/4 cup applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups plain, all-purpose flour
  • 1/2 cup chocolate chips

  • Pre-heat a fan-forced oven to 160°C. Lightly grease a 12-cup muffin tray.
  • In a large mixing bowl, mash the bananas with a fork or potato masher (complete GAME CHANGER) until smooth.
  • Stir in the melted butter, along with the salt and baking soda.
  • Add the sugar, applesauce and vanilla and stir until combined.
  • Fold in the flour. Try not to over-mix it - you want to mix it just enough so that you can't see any dry bits of flour.
  • Gently fold in the chocolate chips.
  • Spoon the batter evenly into the prepared muffin tray. If desired, top the muffins with a sprinkle of sugar and a few extra chocolate chips.
  • Bake for 26 minutes, turning halfway, or until golden and a skewer inserted comes out clean.
  • Remove the muffins from the oven and allow them to cool in their tray before transferring them to a cooling rack to fully cool.
