These spinach and zucchini fritters are an easy-to-make, delicious snack perfect for kids and adults alike! I make a batch of these every single week and pop them in the freezer so I always have an quick, nutritious and savoury snack on hand for my toddler.

Eloise LOVES these. They're made with only a few ingredients and you can switch up the veggies depending on what you have on hand. Some of my favourites are:

zucchini and finely grated carrot (use 1 medium zucchini and 1 small carrot)
zucchini (use 2 medium zucchinis)
broccoli (use approx. 100g cooked and chopped broccoli)

If using carrot or broccoli, make sure you've squeezed out excess water using your hands, just like the recipe instructs for the zucchini.

Ingredients  

  • 1 medium zucchini
  • 2 large handfuls baby spinach chopped into thin ribbons
  • 1/2 cup grated tasty cheese
  • 1/2 cup plain, all-purpose flour
  • 1 tsp garlic powder
  • small pinch ground black pepper
  • 2 eggs

Instructions 

  • Pre-heat a fan-forced oven to 180°C. Line a baking tray with baking paper.
  • Grate the zucchini and squeeze it using your hands to remove excess water.
  • Add the zucchini to a large mixing bowl. along with the chopped spinach, grated cheese, flour, garlic powder and pepper. Toss to coat.
  • Crack in the eggs and stir well to combine.
  • Scoop out equal-sized amounts of batter onto the lined tray, allowing for a little room for them to spread while baking. The amount of fritters you make will vary depending on how large you choose to make them.
  • Bake for 15-20 minutes or until golden and cooked through.
  • Allow to cool completely before storing in the fridge for up to 3 days or freezing.
